Ethiopian breakfast dishes to share at ge'eza

Foul

Foul is a dish of simmered beans, common across several cuisines of the region. The Ethiopian version at ge'eza is fava beans simmered with Ethiopian spices, with fresh tomato, onion and green chilli, served with French bread. It costs 5,500 F and is vegan. Special Foul, at 6,500 F, is topped with a soft-boiled egg and creamy feta, or fresh avocado depending on the season: it is the breakfast signature.

Enqulal tibs

Enqulal tibs are Ethiopian-style scrambled eggs: cooked in oil with jalapeño, tomato and onion. The dish is simple, quick and fragrant, at 2,000 F. It can be a side or a main, with bread.

Chechebsa

Chechebsa is a flatbread crumbled and tossed with berbere and spiced butter, then finished with honey, at 4,500 F. The menu describes it as warm, fragrant, deeply Ethiopian, and lists it among the homemade dishes. It shows the Ethiopian taste for mixing savoury, hot and sweet well. Genfo

Genfo is a thick barley porridge served with a well of niter kibbeh and berbere, at 6,500 F. It is described as an Ethiopian morning ritual, nourishing, grounded, deeply comforting. You eat it with a spoon or by dipping injera into it. It is the most traditional dish of the series, worth trying for the texture.

Coffee naturally goes with these dishes. The Ethiopian macchiato, an intense espresso softened with a little hot milk, is 2,500 F.
